Beanburgers

Drain the black beans, and mash them well in a bowl (this is hard to do without a masher).

Mix in flour until bean/flour mixture is thick enough that it is difficult to stir.

Chop scallions finely, and fry in oil.

Add large lumps of bean/flour mixture. Fry on both sides until lumps form darkish solid patties (it helps to press down on them with a spatula to make them thinner.)

Serve with tomato sauce. If you happen to have cooked lasagna noodles on hand, they taste really good wrapped up in one of those.
